Though not yet well-known in North America, Konjac is a root vegetable that's been eaten for centuries in Asia. It's high in fibre, and low in calories (just 10 per serving, or 30 for the entire package), with no fat, carbs, sodium, or sugar. Konjac has a low Glycemic Index, so it's also suitable for diabetics.
